The Old Bank
of Geeveston

A DESTINATION

Our small seated boutique bistro is located in the old forest town of Geeveston, Tasmania. At the bottom of the world where the air is clean, at the foot of the Hartz Mountains. Where produce is abundant and you may be surprised with the offerings that are placed in front of you.

You’ll experience something wild, something pure and something Tasmanian, to evoke the essence of the past. This is reflected in our craft, making almost everything on the premises, just like the bygone era.

MAIN ETHOS

Our main focus is on the complexity, layering and depth of the food.

We are not dictated or influenced by trends & adhere to old school style of cooking with more focus on taste and substance.

Roasted quail on a small cast iron skillet, placed on a wooden board, with a side of beetroot chips in a copper cup, on a rustic wooden table, with green plant leaves and a black and white striped chair in the background.

THE GAME KEEPERS

Here at The Old Bank of Geeveston we embrace the 'nose to tail' approach. A food philosophy that aims to use all parts of an animal. Similarly, we also use fruits and vegetables in the same way, known as 'root to fruit’. This is our food philosophy.

FRESH INGREDIENTS

Most of our fresh produce is sourced from local producers including ourselves and farmers, making economical and logistical sense. As our food reflects the season, we preserve excess local produce which is used in our colder seasons as there is limited availability.
